RV Cooking on the road and while at the campground. Cooking in your RV or at the campsite can be challenging when space or supplies are limited. Below are a some recipes that are quick and easy, but do not sacrifice the flavor.

Grandma's Skillet "Baked" Beans


Ingredients:
• 4 Slices Bacon - Diced
• 2 Cans Pork & Beans
• 1/3 Cup Packed Brown Sugar
• 1/3 Cup Chopped Onion
• 1/4 Cup BBQ Sauce
• 1 Tablespoon Prepared Mustard

Directions:
Saute bacon & onion in large skillet. Add remaining ingredients, simmer for 15 minutes stirring occasionally.

Red Onion Smoked Chicken Dip


Ingredients:
• 4-8 oz. pkg. cream cheese, softened
• 1/2 cup picante sauce
• 1 T. chili powder
• Dash garlic powder
• 1 small can diced green chilies
• 3 chicken breasts
• Liquid Smoketter

Directions:
Season chicken breases with liquid smoke & bake 350 prox. 30 min.
Cool and cut into small pieces.
Mix cream cheese, picanta sauce, chili powder and green chilies.
Fold in chicken
Chill
Serve with diced red onion, tomatoes and jalapenos

Campfire Grilled Vidalia Onions


Ingredients:
• 1 large Vidalia Onion, peeled and quartered
• 2 tbsp. softened butter
• 1 tsp. beef bouillon granules
• Garlic Salt (Optional)
• Pepper, to taste

Directions:
Preheat an grill to medium heat.

Place the onion wedges on a sheet of aluminum foil (heavy duty works best). Dot with butter, then sprinkle with garlic salt, bouillon, and pepper to taste. Wrap onion in aluminum foil to form a packet, leave a small hole to vent.

Place on preheated grill, and cook until the onions are soft, and brown for 45 minutes to 1 hour depending on the heat of the grill. Stir the onions after the first 1/2 hour, or as needed to keep them from burning.

One Pan Breakfast


Ingredients:
• 1 package shredded hashbrowns
• Sausage, cooked and crumbled) * Can substitute - Crumbled Bacon or Diced Ham
• One garlic clove (can substitute garlic powder)
• One small onion, chopped (or 1 tbls. dried onion)
• 6 Eggs, beaten
• 1 8 oz package Shredded Cheddar Cheese * Can use Cheddar Jack Blend
• Non-Stick Spray or Vegetable Oil


Directions:
Spray bottom of pan with non-stick spray or use 1 tbsp. oil to coat. Place package of hashbrowns in pan. Next, sprinkle sausage on top of hashbrowns evenly. Combine eggs, garlic, and onions, and pour over hashbrown mixture. Top with cheese and bake 30 minutes. If cooking on stovetop or over campfire, brown potatoes and meat in skillet first, then add egg mixture, turning once. Add cheese and cook until it is melted.
